2 1/2 cups (about a 10-ounce bag) pitted frozen cherries
1/4 cup granulated sugar
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 cup packed brown sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
2 cups buttermilk
6 tablespoons melted unsalted butter, plus more for greasing
1 cup bittersweet chocolate chips
1 quart vanilla ice cream
Caramel sauce and chocolate sprinkles, for serving
01For cherry compote: Bring cherries, sugar, and 1 tablespoon water to boil in small saucepan over medium-high heat . Reduce heat to medium-low and simmer, stirring occasionally, until cherries soften and juices thicken slightly, about 15 to 20 minutes. Smash cherries with back of spoon as they soften. Remove from heat and let cool.
02For waffles: Whisk flour, cocoa powder, brown sugar, baking powder, baking soda and salt together in a large bowl. Make a well in the center of flour mixture and add eggs, buttermilk, melted butter and chocolate chips. Mix together until just combined.
03Heat waffle iron until very hot and lightly coat with butter. Working in batches, add batter to waffle iron and cook until cooked through, about 4 to 6 minutes. Batter amount and cook time may vary, follow manufacturer instructions for best results.
04Top warm waffles with 1 big scoop of ice cream, a spoonful of cherry compote, a drizzle of caramel sauce and sprinkles.
