Red & Green Fontina-Cheddar Melt

1 tablespoon butter

2 slices country white bread

2 ounces mild Cheddar, sliced

2 ounces domestic Fontina, sliced

1/4 cup roasted red pepper, diced

1/4 cup julienne spinach, steamed


01Preheat oven to 425°F. Line a baking sheet with parchment paper.
02In a small sauté pan, heat olive oil over medium-high heat. Add spinach and sauté until wilted.
03 Place slices of bread on the baking sheet. Top with baby spinach and roasted red peppers. Sprinkle with Fontina cheese and cheddar cheese.
04Bake for about 5-10 minutes or until cheese has melted and bread is toasted.
