Pumpkin French Toast

4 large eggs

1 cup milk

1/2 cup pumpkin puree

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

Kosher salt

1 loaf fresh brioche or challah bread, sliced 1” thick

Unsalted butter, for cooking

Pumpkin Butter

Maple syrup and confectioners sugar, for serving


01Whisk together eggs, milk, pumpkin, vanilla, cinnamon and salt in baking dish until fully combined. Soak each slice of bread 30 second per side in egg mixture.
02Melt 1 tablespoon butter in large nonstick skillet or griddle over medium heat. Once melted, add 2 slices soaked bread and cook until golden brown, about 4 minutes. Flip and cook second sides for additional 4 minutes. Remove from skillet, add another tablespoon butter and repeat until all bread is cooked.
03Serve topped with pumpkin butter, maple syrup and powdered sugar.
