Ingredients

1 cup unsalted butter

1/2 cup sugar

2 cups all-purpose flour

Second Layer

2 cups sugar

1/4 cup lemon juice

Zest of 2 lemons

4 tablespoons all-purpose flour

4 eggs, beaten

Topping

1/4 cup confectioner sugar

Preparation

01Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.
02In a bowl, mix together first layer ingredients butter, sugar, and flour. A pastry cutter helps to process these ingredients into a dough mixture. Press the mixture into the pan and bake for 20 minutes.

04Remove dish from oven and pour second layer mixture over the first layer while it is still hot. Place dish back in oven and bake additional 25 minutes until cooked through and golden brown.
05Cool for 10 to 15 minutes and sprinkle with confectioner sugar.
