Ingredients for Pastry

1 (16-ounce) package katafi dough (shredded filo)

2 (12-ounce) packages of mozzarella

4 ounces butter

Ingredients for Syrup

2 cups water

1 cup rose water

3 cups sugar

Preparation

01Heat oven to 365 F.
02Chop katafi dough into 1-inch pieces.
03Melt butter in a large bowl.
04Toss katafi dough in melted butter.
05In a buttered half-sheet pan, press half of katafi dough, creating the first layer.
06Bake for 10 minutes, until golden brown.
07Cut cheese into half-inch cubes.
08Spread cubes evenly over baked katafi dough.
09Scatter the remaining uncooked katafi dough over cheese.
10Bake for 30 minutes, until the second layer is golden brown.
11In a saucepan, combine syrup ingredients, stir, and bring to a simmer for 5 minutes.
12Serve knafeh warm with a generous drizzle of rose syrup.
