Ingredients for Marshmallow Crème Filling

1/2 cup full-fat plain Greek yogurt

1/2 cup marshmallow crème

1 teaspoon vanilla extract

8 slices thick-cut bread, such as challah, sourdough, or French

1/2 cup whole milk

2 large eggs

1 tablespoon unsweetened cocoa powder

2 teaspoons powdered sugar

1 teaspoon vanilla extract

Pinch of salt

1 tablespoon unsalted butter

Preparation

01Make the filling: In a small bowl, whisk together yogurt, marshmallow crème, and vanilla to a spreadable consistency.
02Make the French toast: Spread one-fourth of the marshmallow crème filling in a thick layer on a piece of bread and top with another piece of bread, forming a sandwich. Repeat with the remaining bread to make 4 sandwiches.
03In a medium bowl, whisk together milk, eggs, cocoa powder, powdered sugar, vanilla, and salt.
04Dip sandwiches into milk and egg mixture, coating completely.
05In a large skillet over medium heat, heat the butter. Once skillet is hot, place sandwiches in skillet and cook on both sides for 2 to 3 minutes or until golden and crisp. Depending on the size of your skillet, work in batches (do not overcrowd).
06Top with toppings of choice and serve.
