Ingredients

1 stick unsalted butter, room temperature

1 cup Parmesan cheese, grated

1 cup mixed fresh herbs (parsley, thyme, sage oregano and/or rosemary), finely chopped

3 cloves garlic, minced

1 tablespoon fresh lemon zest

1 tablespoon fresh orange zest

Kosher salt and freshly ground pepper, to taste

15-22 pound whole turkey, room temperature (brined if desired)

Preparation

01Combine butter, cheese, herbs, garlic, and citrus zests in medium mixing bowl. Season generously with salt and pepper, and mix until well-combined.
02If applicable, remove turkey from brine and pat dry with paper towels. Place turkey on roasting rack in roasting pan. Rub herbed Parmesan butter over and under the turkey skin in thin but even layer.
03Cover turkey with foil and bake in desired method. (Note: general unstuffed turkey cook time is approximately 20 minutes for every pound at 325 degrees).
04Remove foil from turkey 20 minutes before the end of the cooking time to get skin browned and crisp.
05* Tip: Reserve a portion of butter prior to rubbing on turkey (or make a double-batch) to have flavorful butter to mix into mashed potatoes or spread on freshly baked rolls.
