01Remove puff pastry from the freezer, allow to thaw at room temperature.
02Preheat oven to 400 degrees.
03Slice guava block paste into thin rectangular slices. Set aside.
04In a small bowl, use a spoon to combine the mascarpone cheese and cream cheese. Set aside.
05Whisk egg and water in a small bowl and set aside.
06On a lightly floured surface, place one sheet of puff pastry dough. Use a sharp knife or pizza cutter to cut the pastry into 8 equal pieces.
07Place 2 thin slices of guava paste and 1 1/2 tablespoons of cream cheese onto 4 pieces of pastry. Egg wash the rims of the filled pastry.
08Score the remaining 4 pieces of pastry. The scores will serve as vents to release the air as the pastry bakes.
09Use the scored pastry to top the filled pastry. Trim away any uneven areas or excess pastry and seal the edges of the pies with a fork. Egg wash the tops of the pies and sprinkle with turbinado sugar.
10Repeat steps 6-10 for the remaining sheets of pastry until all the pies are made.
11Place the pies on a parchment lined baking tray and bake for 15-20 minutes until golden.
Remove from the oven and serve when slightly cooled.
