Grilled Buttermilk Chicken

Ingredients

2 cups buttermilk

2 tablespoons maple syrup

1 tablespoon Dijon mustard

Juice of 1 lemon

1 teaspoon kosher salt

1/2 teaspoon ground black pepper

2 cloves garlic, minced

1 1/2 to 2 pounds boneless, skinless chicken breast

Preparation

01In a bowl or large resealable bag, add buttermilk, maple syrup, Dijon, lemon, salt, pepper, and garlic and mix well. Add chicken and coat completely. Place in refrigerator to marinate 2 to 12 hours.
02Remove chicken from refrigerator and allow to sit at room temperature for 30 minutes before cooking.
03Heat a grill over medium heat and lightly oil the grates.
04Place chicken on the grill and cook 7 to 8 minutes on one side. Turn and cook on other side 7 to 8 minutes. Transfer to a platter and tent with foil, allow to rest 5 minutes.
05CHEF TIP: To be sure that poultry is fully cooked, use a meat thermometer and take the internal temperature of the chicken. The chicken breast should reach 165 degrees F when ready to eat.
