Everything and Egg Frittata

12 large eggs

1 cup milk

1 cup shredded Cheddar cheese

1/2 cup whole milk ricotta cheese

1/2 teaspoon ground black pepper

1 tablespoon butter

1 cup broccoli, chopped

1 red bell pepper, chopped

1 cup salami, diced


01Heat the oven to 350 degrees F.
02In a large bowl, whisk eggs, then whisk in milk, Cheddar cheese, ricotta, and ground black pepper until combined. Set aside.
03In a medium oven-safe skillet over medium heat, melt butter. Add broccoli and red bell pepper and cook until softened, about 5 minutes.
04Add salami and heat through, about 1 to 2 minutes.
05Turn off heat, then pour egg mixture over the vegetables and stir to distribute vegetables and salami evenly.
06Bake in oven for 25 to 30 minutes or until center is cooked through.
