Creamy Tuscan Tortellini

2 tablespoons olive oil

2 tablespoons butter

8 gloves garlic, sliced

1 tablespoon crushed red pepper flakes

2/3 cup sundried tomatoes, roughly chopped

10 fresh basil leaves

1 tablespoon fresh oregano

2 tablespoons Italian seasoning

2 cups Tuscan kale, finely shredded

1 tablespoon lemon zest

Salt and pepper to taste

1 1/2 cups vegetable or chicken broth

1 1/2 cups heavy cream

2 pounds fresh tortellini

1/2 cup Parmesan cheese


01Melt the oil and butter in a large pan or pot on low to medium heat.
02Add in the garlic, crushed red pepper flakes, sundried tomatoes, basil, oregano, Italian seasoning, Tuscan kale, and lemon zest. Mix well.
03Add in a few pinches of salt and pepper and pour in the broth and cream.
04Add in the tortellini.
05After a few minutes, add in the parmesan cheese and mix well.
06Continue to let the tortellini cook fully as per the package instructions. If you are using fresh tortellini, the cook time will be less than if you are using frozen.
07Once the tortellini is fully cooked, serve and garnish with more herbs and parmesan cheese!
