1 pound prepared pizza dough, thawed to room temperature if frozen
1 tablespoon olive oil
1/2 teaspoon kosher salt
1 1/2 teaspoons chopped rosemary
1 pound fresh mozzarella
4 to 5 small tomatoes, sliced
Ground black pepper
01Heat oven to 375 F. Press and stretch thawed pizza dough into a generously olive-oil-greased 9-by-13-inch baking pan (quarter sheet pan). Make deep indentations all over the top with your fingertips, drizzle with 1 tablespoon olive oil and sprinkle with kosher salt and rosemary.
02Bake until golden for about 30 minutes. Remove from pan and cool.
03Cut mozzarella into thin slices and lay all over the top of the focaccia. Top with slices of tomato. Sprinkle with extra salt and pepper. Top with torn or chopped basil and drizzle with extra olive oil to serve. Use a serrated knife to cut pieces.
