4 tablespoons Unsalted Butter, cold and cut into 1 tablespoon-sized cubes

Ingredients for Apple Cake
1 cup All-Purpose Flour, sifted
1 teaspoon Baking Powder
1/4 teaspoon Salt
4 tablespoon Unsalted Butter, room temperature
4 ounces Full-fat Cream Cheese, room temperature
1/2 cup Granulated Sugar
1 Large Egg, room temperature
1 1/2 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
1 tablespoon Whole Milk
2 Large Granny Smith Apples, peeled, cored, and cut into very thin slices
01Preheat your oven to 350ºF. Generously spray a 7” springform pan with a flour based baking spray. Set the dry mixture aside.
02To make the streusel topping, mix together in a medium-size bowl the flour, brown sugar, cinnamon, and salt. With a pastry cutter, cut the cold butter cubes into the mixture and continue to blend until the streusel crumbs form. Stir in the pecans and set aside.
03 To make the cake, whisk together the flour, baking powder, and salt. Set aside.
04Using a hand-held mixer or a stand mixer fitted with a paddle attachment, cream the butter and cream cheese together until well blended and smooth. Add in the sugar, egg, vanilla extract, almond extract, and milk, and beat together until fully incorporated.
05Switch the mixer speed to low and gradually add in the dry mixture a little at a time until the cake batter is just combined.
06Spoon the cake batter into the prepared springform pan, then layer the granny smith apple slices on top, followed by the streusel topping.
07Place in the oven and bake for 40-45 minutes or until an inserted toothpick into the center of the cake comes out clean.
08Remove from the oven and allow to cool until it’s still a little warm, then remove the outer layer of the springform pan.
09Serve with vanilla ice cream and chopped pecans as a garnish.
